Breeding 18 months in foudres 50hL and barrels 500L. Tasting Testing temperature 18-20°C Guard 10-15 years Pairings & wine Game and meat sauce (pad deer, hare a la royale) Beef Carpaccio, duck Breast Cheeses Nose Intense red and black fruits (blackcurrant, raspberry). After aeration, notes of vanilla, chocolate and toasted to barrel ageing to reveal. Mouth Attack elegant and dense. Mouth-structured tannins melted.
