Blend of wines consists of two grape varieties: “King” Argentine wine – autochthonous varieties of Malbec and Cabernet Sauvignon a small proportion. Grapes are grown on 60-year-old vines at an altitude of 2035 meters above sea level. Crop harvested by hand at the end of March or early April in small boxes to 18 kg. Ripeness of grapes is tested on a special table. Winery carefully sorted berries are separated by ridges and fermented in stainless steel tanks under strictly controlled temperature. After malolactic fermentation in oak barrels the wine is aged for 12 months in new (30%) and two-year (70%) French oak barrels and bottled without filtration. Storage capacity of the vintage – until 2023. In 1988, the famous French enologist Michel Rolland and Dani were invited as consultants winemaker Arnaldo Etchart, whose family owns a wine business since 1850 and is one of the oldest wine names in the Calchaqu Valleys. From this fruitful collaboration was born a new project – “San Pedro de Yacochuya”, has released the 1995 first vintage wine inimitable “Yacochuya”.
